To get this domain back - I am sure Google made some pretty good maneuvers. But they also had a huge team of lawyers to figure it out (and no doubt - someone has lost their job). But what would you do if your domain name was hijacked or it merely fell into the void because you forgot to register then name?

You definitely want to call your attorney. His or her first step should be to approach the new owner (undoubtedly there is one) with an offer. The cost of litigating these things is not cheap. But if that doesn't work - you do have some options. Most notably - to have your attorney work through the ICANN process.
